GET TO KNOW HM WOODCUTTER GIN HM No. 2 Woodcutter Gin is something special—truly unlike anything you’ve tasted before. We didn’t just stick to the usual when creating this gin; we played around with different botanicals and experimented with how we make it. It’s become a go-to for seasoned gin lovers, but it’s also a great pick if you’re just starting your gin journey. Try it with a splash of ginger ale, and you’ve got yourself a dangerously refreshing drink that’s perfect for unwinding. TASTING NOTES On the nose, you’ll find clean, fresh citrus aromas with a hint of sweetness. On the palate, the bright lemon myrtle is perfectly balanced by a smooth, caramel oak finish that will leave you wanting more. BOTANICALS Juniper berries, coriander seeds, coconut sugar, lemon myrtle, fresh lemons, fresh limes. After we distil the gin, medium toasted French oak spirals are soaked for two weeks. THE WOODCUTTER GIN'S ORIGIN STORY The Woodcutter Gin is a true HM Gin original, crafted in the early days of our journey and the second recipe in our collection. When I asked our head distiller (and my dad!), Gavin, about the story behind its unique flavour profile, he shared a bit of his creative process. He set out to create a vibrant citrus gin, with lemons and limes as the stars of the show. But after distillation, inspiration struck—he decided to experiment with oak spirals, curious to see how they might transform the gin’s character. That little experiment led to the Woodcutter’s signature flavour. HOW HM WOODCUTTER GIN IS MADE For the base of the Woodcutter we use the highest purity alcohol available in Australia and Juniper berries sourced from Hungary. We further add coriander, coconut sugar and finely cut locally grown lemon myrtle to the mix. The botanical basket is filled with fresh lemons and limes which infuse the gin vapours. The resultant concentrated gin has a full citrus taste and is distilled with an average alcohol by volume (ABV) of 79%. The gin is then stored in stainless-steel tanks. French oak spirals are added giving the Woodcutter gin its natural honey colour. The oak further balances the botanical flavours for a richly smooth finish that is delicious to taste. After some time on oak, the gin is then diluted to 43% ABV, bottled and packed ready to enjoy.
